Delectable Date Squares

2 cups ‘cooking’ dates
3 banana spears
1.5 cups all purpose flour
1 cup coconut (shredded)
¾ cup coconut sugar
¾ cup coconut oil
1 tablespoons ground chia seed
1 tablespoon ground flax seed
½ teaspoon baking soda
1 teaspoon cinnamon powder
½ teaspoon Himalayan salt


Preheat oven to 350ºF. Thinly coat a 8×8-inch pyrex pan in coconut oil.

Plump up the dates by adding them and the banana spears to 1.5 cups of simmering water until the soak up the liquid. In a processor blend the mixture until smooth.

In a bowl add the flour, sugar, coconut flakes, flax, chia, salt, baking soda and cinnamon. Melt the coconut oil combine with dry ingredients.

Use half the mixture and press evenly into the bottom of the pan. Add the date filling evenly and finish with a topping of the flour mixture pressing gently again. Place in the middle rack of the oven and bake for 50 minutes or until crispy and golden brown. Let it rest on the counter before you cut it into bars.
