Ingredients
- 1 cup shredded coconut -unsweetened
- 3/4 cup raw walnuts
- 4 carrots
- 1/2 cup dates -soaked
- 1/4 cup hemp seeds -hulled
- 1/4 cup coconut butter
- 1 tsp cinnamon -ground
- 1/2 tsp nutmeg -ground
- 1/4 tsp cardamon -ground
- 1 tsp fresh ginger

Instructions
- Soak dates in filtered water for a minimum of 10 minutes
- Wash and scrub or peel carrots
- Chop carrots into smaller pieces and pulse into a medium coarse grind in a food processor
- Drain excess water from dates
- Add remaining ingredients into the food processor (except for 1/2 cup shredded coconut and 1 tsp of ground cinnamon)
- Pulse ingredients until everything has combined to a desired consistency - neither chunky nor smooth - somewhere in the middle will be just right
- With a spatula transfer 'batter' into a bowl
- In another bowl combine remaining coconut and cinnamon to lightly 'dust' the bites
- Form 1-inch by 1-inch bites by hand and dust them with dry mixture
- Store in a sealed container and refrigerate
Recipe Notes
- Best eaten chilled as flavours will deepen over time
- Can be frozen if desired
