Ingredients

Instructions
  1. Soak dates in filtered water for a minimum of 10 minutes
  2. Wash and scrub or peel carrots
  3. Chop carrots into smaller pieces and pulse into a medium coarse grind in a food processor
  4. Drain excess water from dates
  5. Add remaining ingredients into the food processor (except for 1/2 cup shredded coconut and 1 tsp of ground cinnamon)
  6. Pulse ingredients until everything has combined to a desired consistency - neither chunky nor smooth - somewhere in the middle will be just right
  7. With a spatula transfer 'batter' into a bowl
  8. In another bowl combine remaining coconut and cinnamon to lightly 'dust' the bites
  9. Form 1-inch by 1-inch bites by hand and dust them with dry mixture
  10. Store in a sealed container and refrigerate
Recipe Notes
  • Best eaten chilled as flavours will deepen over time
  • Can be frozen if desired
