Instructions
Clean Rice
  1. Bring lentils to a boil then simmer for 20 minutes.
  2. For brown rice I use a 2-1 ratio of water to rice. In a pot add brown rice, water and spice blend. Set aside and wait for lentils to cook. Once lentils are cooked rinse, drain and add to the rice. Bring to a boil, reduce and simmer covered for approx. 20 minutes.
Tomato Sauce
  1. As a general rule I do not purchase ready-made tomato sauce. Not only is relatively expensive it often contains sugar and other additives. Once I discovered Italian style strained tomatoes I have never looked back. Ingredients: strained tomatoes and salt in a glass jar sold for $2. Simply add entire jar in a pot with minced basil, garlic and salt. Bring to a boil and reduce to a low simmer.
Assemble
  1. Cut off the stems of the collard greens.
  2. With a paring knife gently slice the thick portion of the stem off. This will make folding much easier and reduce tears.
  3. Add water to a large frying pan and bring to a boil. In another large bowl add cold water with ice cubes. Blanch the collards one by one for 30 seconds (watch them turn bright green). Follow by putting them in the ice bath to stop the heating process. Once all are complete drain and set aside.
  4. Turn the oven on to 350 degrees Fahrenheit.
  5. For perfect wraps follow 3 simple steps:
  6. Add a scope of filling (gauge depending on size of collard) in the centre.
  7. Fold the sides into the centre.
  8. Fold the bottom to the top and fold into the filling and roll up.
  9. In any oven-safe dish (cast-iron pan, casserole dish etc.) add enough tomato sauce to cover the bottom. Position collard wraps side by side and op with remaining tomato sauce.
  10. Slide into the middle rack of the oven and let it bake for 30minutes.
  11. Serve and enjoy as a side dish or meal.
Recipe Notes
The are many alterations you can make for this recipe:
  • Add goats cheese
  • Change the spice blend
  • Make rice more 'dirty' with cooked onions, celery &¬†bell pepper
