  1. In a large pot heat grapeseed oil over medium high heat. Add the onion and saute until soft and lightly caramelized, about 6 minutes.
  2. Add the garlic and cook an additional 2 minutes.
  3. Add the anchovies, capers, olives, tomatoes, paste, basil, and seasoning. Simmer until the sauce is thickened and slightly reduced, about 50 minutes.
  4. When the sauce is starting to look sensational start to prepare the pasta by bringing water to a boil. Add 1 teaspoon salt with the pasta and stir occasionally.
  5. The shrimp will not take long to prepare so it's best to leave this step to while the pasta is cooking. If you have purchased from frozen ensure you have thawed the shrimp under cool water previously. If fresh keep refrigerated until now. Pat shrimp dry with paper towel to remove any excess moisture. Put a frying pan over high heat on the stove and add a tablespoon of butter. Wait until it begins to smoke. With tongs sear the shrimp (do not overcrowd or overlap). Sear 1 minutes on each side.
  6. Once the pasta is del dente (approx. 10minutes) pour it into a colander and drain the excess water. Return it into the pot and combine it with ready made pasta sauce. Serve with grated parmesan and buon appetito!
