Ingredients

Instructions
  1. Ensure phyllo is not frozen (thawed).
  2. Turn on oven and bake at 350 degrees celsius.
  3. Wash and dry greens.
  4. Chop onion in quarters and pulse in a food processor or dice by hand then set aside. In batches, pulse greens and dill in the processor and set aside in a separate bowl.
  5. Heat a large frying pan and drizzle in grapeseed oil. Sauté the onions until translucent and then add the greens, dill, nutmeg and salt. On low heat toss the ingredients to blend and cook the greens through lightly. They will wilt by half their size and have a dark green colour. Turn off the stove and scoop out the mixture into a bowl and let cool on the counter.
  6. In a separate bowl, whisk the eggs until light and foamy.
  7. Crumble the feta and add to the beaten egg mix.
  8. Once greens are cool combine the mixtures and stir well to blend. If you desire more feta - add in the desired amount. Melt butter on the stove. Pour into a bowl and place beside your assembling station.
  9. You will add filling to the phyllo and fold into triangles. See video link in description for visual steps.
  10. When all the triangles are made lightly coat them in butter and bake them in the oven until gold and crispy (approx. 30minutes).
Recipe Notes
These make great appetizers and snacks, especially when made into small triangles. If you prepare more than you will eat, freeze them once formed and save the rest for a rainy day.
